I love green smoothies for breakfast but on a colder day I often crave something warm and comforting.
This easy recipe fits the bill. It's made with steel-cut oats, which create longer-lasting energy compared to oat flakes. In combination with home-made creamy nut butter, sweet mulberries, raw cacao nibs and a ripe banana, it's one the best comfort breakfast recipes I've ever made!
Serves 1
Ingredients:
1/2 cup steel-cut oats (Dutch: haver grutten), rinsed under cold water
1 cup water
1 cup almond milk
1 TBS nut butter
1/4 cup dried mulberries
1/8 cup cacao nibs
1 banana
maple syrup to taste
pinch sea salt
Preparation:
Put the oats, water and salt in a small pan and bring to boil on a medium heat. Reduce heat, cover with a lid and cook on low for 10 minutes. Check regularly to stir and add more water in needed.
Add almond milk and mulberries and cook for another 5–10 minutes, depending how soft you like your porridge. Switch off the gas and add maple syrup to taste.
Put in a serving bowl, add nut butter, banana, cacao nibs and a dash of maple syrup if desired.
Dig in and feel like a super(wo)man all morning long!
